MEET OUR MASTERCHEF

Mario Mandarić

After many international successes his nostalgia for home led him back to Croatia, in a famous restaurant called “Noel” located in Istria (in croatian Istra) where he did an impeccable job as a head chef until the global pandemic in 2020.

Currently, Mario is a head chef at “Passarola” a restaurant situated at the exotic tourist heaven, island of Hvar, where his vision and charisma will most definitely pave the way for the future of Croatian cuisine.

  • Meat platter for two

    (Dalmatian prosciutto, cheese selection, marinated vegetables, olives, garden salad)

  • Fish platter for two

    (marinated mackerel, sea grapes, marinated prawns, sour rock samphire, fish pate)

  • Sea anemones

    (fried sea anemones with sea stone soup and sea urchin wrapped in sour cabbage)

  • Shrimp risotto

    Golden Fried Breaded Button Mushrooms & Roasted Garlic Aioli

  • Lobster ravioli

    (ravioli filled with lobster and server with lobster velouté)

  • Roasted chicken for two

    (signature Passarola receipt with potato puree, and chicken jus) (40 minutes waiting time)

  • Sautéed octopus

    (octopus in sweet wine, new potatoes and basil)

  • Lamb / black vegetables

    (lamb rack, black vegetables and lamb jus)

  • Turbot / chicken skin

    (turbot file with crispy chicken skin)

  • Tournedos Rossini
